Gluten Free Cakes

This challenge took me over 6 months to develop. These are made with a blend of white and brown rice flour and potato flour. I blend them myself. I have found this is the best combo for the best flavor ever! The “cake part” of the cakes is all the same batter with different fruit in each which gives each on a unique flavor. They are all made from scratch, no preservatives or canned fillings. I use only canola oil (no trans fats) and fresh eggs.

The varieties include apple, apple walnut, blueberry, peach, pineapple, pina colada, and chocolate chip (also gluten free). Seasonal varieties include strawberry, cranberry and blackberry. These may be frozen by the slice or whole cake. The thaw time is about 2 hours. Shelf life is about 6-9 days, but can be extended if the cake is kept in the refrigerator. Ingredients: rice flours, potato flour, sugar, canola oil, fresh eggs, fruit, orange juice, vanilla, baking powder and salt.
